Bacon wrapped scallop?
This type of shellfish is farmed in Baja California, on the Pacific Ocean side if I’m not mistaken, where the water is much cooler than in the Sea Of Cortez. It goes by a similar name but in Spanish - Callo Garra De León, or Lion’s Claw.
