Hell yeah, homemade stock is great in so many things. I make a lot and freeze it in portions to use over a month or so. I generally use a big slow cooker so I don’t have to have it on the stove. It takes a bit longer, and skimming any oil/fat is a bit more annoying, but it works well. I typically cook it for like 12 or so hours.

One thing I don’t do though is salt it. Unsalted gives you a wider range of uses for it and it doesn’t become too salty when reduced to a demi-glace or something.
