I have 3 fan coil units in my condo. Is is possible to setup Google Nest to control each one? Is there a good video I can learn from?

Do you have a picture of what’s behind the thermostat? The answer to your question is probably yes but somewhat depends on wires.
Remove the cover of your thermostat and see which wires you have. You can go to the Ecobee, or nest website and see if their thermostat is compatible with their system
