I’ve had some versions that used sweet white onion, but I’m not sure how pickled red onion would play with the rest of the flavors. I’d be interested to see what it tastes like.

Hmmm…red onion I could definitely see adding to the flavor. I’ve had some versions that used sweet white onion, but I’m not sure how pickled red onion would play with the rest of the flavors. I’d be interested to see what it tastes like.
