Hello, I’m interested in hearing some fun vegan recipes that aren’t too complicated/take less than 30 minutes to cook. A lot of what I make is pretty intensive so I wanted to hear some good ideas for stuff that isn’t if you guys wouldn’t mind sharing.
Texturized soy ceviche.
Mexican recipe, very easy to make with ingredients available mostly everywhere. You will need texturized soy, a cucumber, a tomato, a onion, an avocado, salt, limes, tostadas (fried/baked corn tortillas) or use salty crackers, clamato ( tomato and clam juice, clamato is the brand).
Hydrate the soy on shrimp broth ( can be veggie broth ). Heat the broth until boiling and then add the soy and put out the flame. Let it hydrate for 10-15mins. Take out the soy and squeeze the excess liquid, let it cool ( you can make big patch and then freeze it and use it when u want).
Chop cucumber, tomato and onion in cubes. Add a bit of salt to the veggies. In a glass refractory preferably, mix the soy with chopped veggies and add the juice of some limes ( up to taste ). Then add a bit of clamato juice and mix. Let it cool a bit on fridge and its done. There might be a lot of videos on youtube about it, look for ceviche de soya.
